The latest trend has been making DIY fast food, like Taco Bell’s Fiesta Potatoes. This dish can be made at home and the best thing about this DIY is you can make the side dish to your liking rather than the way it comes from the restaurant. This is a quick and simple recipe that can be fun and tasty at the same time. Let’s get the fiesta started. Ingredients: 2 pounds of potatoes 1/4 cup of canola oil 1/8 cup flour 1/4 cup cornstarch 1 teaspoon paprika 1/2 teaspoon salt 1/4 teaspoon black pepper Pinch of cayenne 1 container of Sour Cream 1 jar of nacho cheese Green onion (optional) Steps: 1. Preheat the oven to 425 degrees. 2. Wash the potatoes, but do not peel them. 3. Boil the potatoes for 20 minutes in a medium size pot. 4. Cut the potatoes into 1–2-inch pieces and toss in the canola oil. 5. Mix the canola oil into potatoes. 6. Mix the flour, black pepper, cornstarch, paprika, salt and cayenne together in a medium size bowl. 7. Toss the potatoes in the dry ingredient mixture and mix until the potatoes are coated. 8. Place the potatoes on a nonstick baking sheet or spray the sheet with oil. 9. Bake for 20 minutes until golden. 10. Pour the potatoes in a regular bowl and top with sour cream and nacho cheese. 11. Dice the green onion into small pieces and sprinkle it on top of the potatoes. Trying a recipe for the first time can be a little tricky, but with a bit of practice comes perfection. If you are a big fan of hot sauce, don’t forget to drizzle some on top. The good part about this side dish being a DIY is that you can make it your own. If you feel that this is too unhealthy, you can try a healthier alternative. For instance, what kind of sour cream used is up to the chef’s discretion. Instead of regular sour cream, maybe using low fat or dairy free may be a better option. That is the best part about DIY: you can make Taco Bells’ Fiesta Potatoes however you want. You can add more or less ingredients of your choosing. Whatever way you choose to make it, just make sure you enjoy it. Trader Joe’s snack combos & quick meals A fun hobby I developed in the past year is shopping at Trader Joe’s. I usually spend around $30-50 whenever I enter the holy land that is that grocery store. I always start my trip by grabbing a bouquet of flowers at the front and then make my way around the store (a few times). I love to browse the products and go in with some previous research. Tik Tok always lets me in on great Trader Joe’s must-haves. Sometimes, my best friend will even meet me there and we make a date of it. As a busy college student, it’s nice to have easy and healthy snack and meal options in between Zoom meetings and sleeping. Here are a few of my go to snacks. Tortilla chips and roasted garlic hummus It sounds simple, but at Trader Joe’s, there are a variety of dips to choose from. I’m a garlic girl, so I’m down for any dip advertising a garlic flare. My favorite is the Roasted Garlic Hummus. It pairs well with their Longboards Organic Tortilla Chips or the Organic Blue Corn Tortilla Chips. Gone berry crazy (dark chocolate covered strawberries) and corn puffs The strawberries are frozen right at peak ripeness and covered in a thin layer of dark chocolate. These little jewels are great for topping sundaes, oatmeal or just in-between-meal snacking. They are so easy to pop in and out of the freezer on a hectic day. They also have Gone Bananas, which are banana slices covered in dark chocolate. I like to eat two or three strawberries with a handful (or two) of Sour Cream & Onion Corn Puffs.
