ONE NSU MAGAZINE During the midst of the COVID-19 pandemic in 2021, the issue of food insecurity became an inescapable issue witnessed firsthand by Meline Kevorkian, Ed.D., Senior Vice President for Academic Affairs and Associate Provost and dean of the College of Computing and Engineering, when she was walking through the college with a colleague. As they were chatting, Kevorkian observed a student fishing through a garbage can for something to eat. “Because we had been conducting much of our studies online, we had not seen the student for a while,” she explained. “He looked like he had shrunk to half his size, and he confided that he had been hospitalized from not eating. I didn’t have my wallet on me, but my colleague did. He took out $20 and told the student to go to the food court and get something to eat.
